1、3-4分鐘。但不要全程高溫，先用大火蒸2分鐘，再轉80度中火蒸1分鐘。
2、蒸的時候蓋子不宜蓋太緊，不能蒸的太久，不能現放調味品，采用放氣法可以防止雞蛋羹出現小孔。
3、不能攪蛋液，猛攪或長時間攪動蛋液會使蛋液起泡，蒸時蛋液不會溶為一體。
