  1、豬肝在烹調前最好先“去去毒”:先用淡鹽水浸泡2至3小時,再放清水裡泡一會;也可将豬肝切成片,在盆中輕輕抓洗,然後沖洗幹淨再烹調。

  2、豬肝不要切得太薄。豬肝切成2-3毫米厚比較合适,炒出來的豬肝有彈性,切得太薄受熱反倒容易變硬。

  3、豬肝一定要反複浸泡、漂洗。因為豬肝裡有許多血液和黏液,隻有充分浸泡漂洗後,各層間的血液和黏液才能去除掉,這樣炒熟以後,才會脆嫩爽口。
