  1、鮮蝦去頭、去殼、去蝦線,洗淨留蝦仁。

  2、蝦仁剁成泥,加料酒、蛋清、鹽和澱粉。順一個方向攪拌成蝦滑泥。小蔥,幹辣椒切成段,生姜切絲,蒜拍扁。

  3、鍋中放油,再放蔥白段、蒜、花椒、姜絲爆香。放豆瓣翻炒,出紅油後倒開水燒開。

  4、用勺挖出蝦滑泥,放入湯中,定型後再放。全部放完後,放白糖,生抽,鹽,幹辣椒調味。

  5、另一個鍋燒水放青菜,豆芽焯熟撈出放入碗中,再連湯倒入蝦滑。
