  1、死後氧化發黑蝦頭部分布着内髒,一旦蝦死亡,很快會氧化變色、發黑。蝦死後,蝦的内髒在搬運、擠壓過程中容易破損,這樣蝦煮後,甚至在還沒下鍋煮時蝦頭以及蝦體就會發黑。

  2、蝦還未消化完畢蝦頭裡面有胃囊,估計裡面的東西沒有消化幹淨。比如蝦在起捕時,飼料喂太多,當天就上市銷售。在飼料還未消化完畢的情況下烹饪,蝦煮熟後容易發黑。
