雞爪家常鹵法

  1、先将雞爪尖剁除、洗淨,然後放入适量的冷水,再加入兩大勺料酒、姜片,氽燙,再撈出用冷水洗淨浮沫;

  2、把氽燙過的雞爪放入鍋内,再放入适量的冷水(剛沒過雞爪即可)、幹辣椒段、花椒、香葉、八角、桂皮、幾小塊冰糖、蚝油、料酒、幾滴白酒、老抽、适量的鹽,開中小火煮開後,再用小火鹵煮約30分鐘,然後熄火,可直接裝盤開吃,也可讓雞爪浸泡在鹵湯1-2小時,時間浸泡的長點會更入味。
