  1、香炖奶蛋原料:雞蛋6個,鮮牛奶250克,白糖200克,香油3克。熟豬油50克。

  2、取耐高溫酒杯10隻洗淨揩幹,用熟豬油(20克)将杯内簿塗均勻。鍋置微火上,下熟豬油(30克)白糖(75克)煮化,待糖油燒至走泡呈赤色時(不要燒焦),迅速起鍋,平分盛入杯底。

  3、雞蛋磕在大碗裡,打散後加入白糖(125克)、牛奶、香油攪拌至糖溶化,然後均分倒入杯内,裝好上籠屜用旺火蒸15分鐘取出,灌去蒸汁,迅速用薄竹片沿着杯内邊緣劃一圈至底,并分别倒置于小碟即成。
