  1、主要食材:金鱗魚。

  2、金鱗魚整淨後用鹽擦勻魚身,置蕉葉上,紅蔥頭、河蝦碼好,火腿絲撒面,入屜蒸至熟,取出,淋上花生油即可。

  3、傳統蒸魚多用姜蔥豉油,但因大頭魚變種的金鱗魚屬西江水庫河鮮,肉質好,沒泥腥味,故連姜都可不用,以紅蔥頭、油鹽水足可帶出魚肉的嫩滑,且更鮮香;用河蝦、火腿絲,是為油鹽水提鮮。
