  1、将熟鴨胸肉切成長方形厚片,火腿切成寬1厘米、長2厘米的日字形薄片。用大碗将鴨肉(鴨皮向碗底)、火腿片、香菇(香菇切片炒過)間隔排列放在碗裡,砌成魚鱗形,砌完為止。

  2、栗子切粒和蓮子放入蒸籠,炊熟後同蝦米下油鼎炒香,調入鹹味打芡,放在鴨肉上面加上湯入蒸籠炊約20分鐘取出;倒出原湯後,把原料反轉盛入餐盤,再将原湯調味并用濕粉勾白芡,加麻油和包尾淋在鴨肉上即成。特點:軟滑醇厚,濃香入味。
