  1、食材:牛肋闆肉五斤、醬油五兩、食鹽二兩、蔥段三棵、甜面醬一兩、蒜一頭、姜五片、花椒、大料、丁香、桂皮、豆蔻、砂仁、肉桂、白芷等八味共一兩。

  2、做法:将牛肋闆肉洗淨,控去血水,鋸刀切成大方塊,泡在冷水裡約三十分鐘,放入開水鍋裡煮透撈出。重換一鍋水再煮入牛肉,待浮沫飄起後撇去,加入各種調料和藥料(要用布包住以便下次使用),用溫火慢慢炖爛即成。
