  1、将鳝魚剁成長一寸五分的段,玉蘭片、胡蘿蔔都切成長八分,寬四分,厚五厘米的片,油菜寬者切開,切成八分長的段。蔥姜蒜切成末;花椒加水調成花椒水;澱粉加水調成芡汁備用。

  2、鍋内放入油,燒至八成熱時,放入鳝魚段炸成火紅色,倒入漏勺内。鍋内放入底油,用蔥姜蒜炝鍋,添湯加入醬、白糖、醋、紹酒、花椒水、味精、玉蘭片、胡蘿蔔、鳝魚段,待湯燒開後,用慢火煨熟,将魚段取出放入盤内,将油菜放入鍋内,用濕澱粉勾芡,淋上明油,澆在魚段上即成。
