  1、新鮮的牛肉肌肉是呈均勻的紅色,有光澤表面微幹或有風幹膜,觸摸時不會粘手,指壓後的凹陷能立即恢複。

  2、變質肉肌肉色澤呈暗紅,無光澤,有腐臭味,表面極度幹燥或發粘,新切面也粘手,指壓後的凹陷不能恢複。
