  1、雞大腿4隻,雞蛋1隻,澱粉20克精鹽3克,面包屑50克,胡椒粉2克,熟豬油500克。

  2、在雞腿肉上直劃一刀,除去腿骨使腿肉分開,平攤在案闆上,去雞皮兩面用刀背輕輕拍幾下。

  3、用胡椒粉、精鹽拌和一下兩面再拍上澱粉。雞蛋磕在碗裡,用竹筷攪拌後,均勻地塗抹在雞肉上再拍上面包屑。

  4、炒鍋上火燒熱油燒至六成熱,将雞排放入炸至酥脆漏勺撈起,改成菱形塊裝盤即可。
