  1、切下頭、尾留用,斜刀切除魚身的大剌片,切成薄厚适中的魚片,姜、蒜切片。

  2、魚片中倒入料酒、澱粉、雞蛋清,抓勻,鍋中添水,煮沸後加入黃豆芽和蘑菇,煮至軟、至熟撈出。

  3、鍋中倒油,下花椒,加入蒜片、姜片、幹辣椒、豆瓣醬,倒入魚頭、尾、魚骨炒勻,加入适量熱水。

  4、将魚片一片片放入鍋中,加入鹽,出鍋,倒入鋪好豆芽的碗中,辣椒鋪于碗中,淋上熱油就可以了。
