  1、蒸饅頭面沒發好,再放到暖些的地方繼續發酵,直至完全發起為止。或者向面團中加點小蘇打水,然後揉勻面團,再饧發20到30分鐘,即可蒸制饅頭了。

  2、把面盆放在火爐旁或溫熱水中助發,用溫水蒸,在從溫到沸的過程中促進面發。摻少許白酒或醋能促進面發。
