香酥鲫魚步驟

  1、原料調料:淨鲫魚5條(每條約250克),油1000克,醬油75克,蔥100克,姜1塊,黃酒30克,糖150克,味精、醋各少許。

  2、操作程序:鍋内放油,燒至七成熱時,将鲫魚逐條炸至酥透,取出。鍋留少許油,将蔥炸黃透香時,加黃酒、醬油、糖、味精和姜,用小火熬一會,浸入鲫魚熬入味,最後放醋即可。

  3、特色點評: 褐紅色,肉、骨酥透,但魚形完整不碎,味濃鮮香,鹵汁稠濃。
