  1、準備材料:250g花生米、适量油、适量鹽;

  2、将花生米挑出壞爛、抽芽粒,用開水泡2-3分鐘,既可清洗,也是炒制後保持酥脆的要點之一;

  3、花生米撈出,鋪開控幹水分,

  4、最好晾至表面無水,以免炒時爆鍋

  5、熱鍋冷油,即将炒鍋燒熱,即刻下2湯勺油,然後馬上将花生米放到鍋中,保持小火,并将花生米翻炒幾下,使其均勻沾上油,再平平鋪開,浸炸2分鐘左右;

  6、接着轉中火,快速翻炒,至花生慢慢發出噼啪聲,直到發出密集的劈啪聲,立即關火,用鍋中餘溫繼續翻炒幾下;

  7、瀝油盛出裝盤即可。
