  北京辣菜腌制法

  1、将500克腌蘿蔔切絲後用清水浸泡24小時,換水2次,撈出瀝去水分備用。再将250克醬油、10克白糖、少量味精和糖精、0.1克安息香酸鈉調勻煮沸,倒入幹淨容器内。

  2、将2.5克麻油加熱,放入1克辣椒面,炸一下即倒入醬油内。再加1.5克姜絲、5克芝麻、2克桂花、1克黃酒,攪拌均勻,倒入蘿蔔絲。每天攪動2次,7天後即成北京辣菜。
