拔絲紅棗制作方法

  1、食材:紅棗200克、脂油50克、白糖25克、澱粉50克、花生油100克。

  2、将脂油剁成細泥,加白糖,拌勻成水晶餡;

  3、将紅棗放入沸水中浸泡,然後去掉棗核;

  4、将水晶餡抹入空心處,放在幹澱粉中滾動攪拌,反複幾次,使棗均勻地沾上一層澱粉;

  5、炒鍋内放入花生油,中火燒至五成熱時,将棗放進油内,用小火炸至金黃色時撈出;

  6、炒鍋内留油,加入白糖炒至黃色能拔出絲時,倒入炸好的紅棗,不斷颠翻使之沾勻,出鍋即成。
