油蝦丸怎麼做

  1、主料:蝦仁400克

  2、輔料:雞蛋清50克、澱粉(玉米)30克

  3、調料:姜5克、大蔥5克、味精5克、香油5克、鹽3克、胡椒粉3克、花生油35克。

  4、做法:

  (1)蝦仁洗淨放碗内,加蛋清、澱粉、味精、鹽調成蝦膠備用;

  (2)澱粉(8克)放碗内加水調成濕澱粉(15克);

  (3)蔥切段,姜切末;

  (4)先用碗盛起油500克,用手将蝦膠擠成丸狀,每粒約10克,放在油碗裡;

  (5)将上湯8克加入香油、味精、胡椒粉、濕澱粉調成碗芡;

  (6)用旺火将炒鍋内油燒熱,把蝦丸連油放下,用文火将蝦丸至熟,倒在笊籬裡,跟着放入姜末、蔥段、蝦丸、碗芡炒勻,加油便成。
