蒜香臘味燒茄

  1、原料:長茄一根;配料:臘肉50克,小米椒10粒,青紅尖椒各一個,姜、蒜各少許,大蒜一根;調料:蚝油1小勺,生抽1大勺,豆瓣醬或蒜蓉辣醬1小勺,香油、糖和醬油少許;

  2、姜、蒜和青紅尖椒都切碎備用;大蒜将蒜白部分拍裂,然後切碎備用;臘肉切成小片,用溫水泡10分鐘備用;

  3、用蚝油、生抽、豆瓣醬、糖和香油調成汁備用;

  4、茄子切成條狀備用;油燒熱,下茄子炸;茄子炸軟後出鍋備用;

  5、炒鍋留少許底油,倒入控幹水的臘肉爆炒至肥肉變透明;加姜、蒜和青紅椒,炒勻;倒入調味汁和一小碗水;倒入茄子,炒勻,加點醬油上色,轉小火燒;燒至茄子綿軟入味,撒上大蒜末,翻炒兩下即可。
