  1、原料:鮮藕500克,精鹽3克,白糖20克,醬油25克,面粉60克,蔥姜末5克,味精1克,雞蛋1隻,熟花生油500克(約耗100克)。

  2、将藕削去皮、切除節洗淨,用刀斬成茸放在碗内,加入雞蛋、精鹽、味精、面粉、蔥、姜末,拌勻成餡。

  3、鍋上火燒熱,下油用旺火燒至油冒青煙。将藕餡擠成核桃大小的丸于,放入鍋内炸成金黃色時,撈出瀝油。倒去鍋中油,放入少許開水,倒入藕丸,上火燒沸,加醬油、白糖,蓋上鍋蓋,燒約5分鐘,起鍋裝盤即成。
