  食材:豬蹄、蔥、姜、花椒、料酒、醋、腐乳、香油、冰糖、老抽。

  先将豬蹄洗淨,切塊;将豬蹄冷水下鍋,放入蔥、姜、花椒、料酒、醋,煮至軟爛,撈出;把腐乳、香油混合,放一點點豬蹄湯、清水調成汁;鍋中倒入少許油,放入一塊冰糖小火融化;待冰糖溶化後,倒入煮好的豬蹄,不斷翻炒上色;放入兩大勺剁椒,烹入老抽,快速翻炒幾下後,淋上腐乳汁;翻炒,大火收汁即可裝盤。
