  1、切好的作料,将鲫魚淘洗,撲上生粉,放油鍋炸至兩面金黃。

  2、把魚從油鍋裡撈出盛盤,用底油(可以加點豬油)熬制作料,火不要大了,以免煎糊。

  3、燒漲後繼續熬5分鐘左右放入鲫魚。

  4、将鲫魚起鍋盛盤,留湯底放入蔥段,最後勾芡。芡汁由澱粉、白糖、醬油、醋、味精兌成汁,将汁液淋在魚身上。
