  1、材料:牛蛙500克,大蔥150克,色拉油200克,料酒10克,泡姜10克,精鹽1克,味精2克,泡紅辣椒150克,胡椒粉1克,幹豆粉20克。

  2、牛蛙宰殺去頭去皮去内髒洗淨,斬成塊,用鹽、胡椒粉、幹豆粉、料酒上漿碼味。泡紅辣椒去蒂去籽切成節,大蔥洗淨切成節,泡姜切成姜米。

  3、炒鍋下油燒至七成熱,将牛蛙下鍋滑溜斷生撈起。炒鍋内下少許油燒熱,下泡姜米、泡椒節炒出香味,下牛蛙,烹入料酒,放味精、大蔥節簸轉起鍋裝盤即可。
