  1、五花肉洗淨,切成大塊,放入蔥姜八角花椒桂皮香葉,涼水下鍋,燒開後撇去浮沫,繼續将五花肉炖熟;

  2、将肉炖至用筷子可以輕松穿過表示已經煮熟,鍋裡留湯,撈出五花肉自然晾涼,切成3-4毫米的薄片;

  3、酸菜用清水洗淨,用手擠壓掉水後切成細絲;

  4、炒鍋燒熱加入少許油,加熱後放入酸菜煸香。将煸好的酸菜倒入炖鍋,鋪好五花肉,倒入步驟1中的肉湯直至浸沒肉片;

  5、開大揭蓋火燒開炖三四分鐘左右,蓋上蓋子中火炖十五分鐘左右,最後關火前大火炖幾分鐘即可。
