大廚炸蛎黃的做法竅門

  1、主料:牡蛎(鮮)(500克);輔料:小麥面粉(150克);調料:鹽(3克) 豬油(煉制)(75克) 花椒鹽(5克)。

  2、做法:蛎黃(牡蛎)揀去雜質,用清水洗淨,瀝幹水,撒上鹽稍腌漬入味,放入面粉中沾勻;炒鍋内放入熟油,中火燒至七成熱,把已沾上面粉的蛎黃放進油内炸約1分鐘,待外皮已成黃色時,立即撈出;待油升至九成熱時,再将蛎黃入油稍炸,盛入盤内;上桌時外帶花椒鹽。
