  1、準備原料: 鮮活鳝魚500克、姜片10克、蒜瓣20克、花椒3克、八角2枚、三奈5克、桂皮5克、丁香2克、精鹽5克、紹酒15克、白糖5克、醬油15克、味精3克、香油5克、棒骨湯1000克。

  2、鳝魚宰殺後除去内髒及頭尾,洗淨,切成6厘米長的段,入沸水鍋中焯一水撈出;姜片、蒜瓣、花椒、八角、三奈、桂皮、丁香用紗布包好,即成香料包。

  3、棒骨湯倒入鍋中,放入香料包,調入精鹽、紹酒、白糖、醬油、味精、香油,燒沸後下入鳝段,改用小火将鳝段鹵至入味,撈出晾涼裝盤,稍加點綴即成。
