  1、鴨雜碎沖洗幹淨,冷水入鍋,焯水3分鐘,撈起再沖洗一遍,豎着劃幾刀,再橫着切片,這樣既好看又更容易進味。

  2、蒜苔去頭尾,洗淨切小段;酸辣椒去蒂洗淨切碎。

  3、起油鍋,放入鴨雜碎胗爆炒至變色。

  4、把鴨胗撥至一邊,放入酸辣椒、蒜苔爆炒。

  5、最後放入鹽、生抽、蚝油、料酒炒勻,即可出鍋。
