珠玉豆腐

  1、食材:北豆腐300克、鹌鹑蛋8個、蒜苗2根、紅椒碎适量、生抽5ML、鹽2克、水澱粉2勺。

  2、将豆腐切成長方形或方形、約1CM厚的片;用裱花嘴在豆腐片中間挖一個小洞;

  3、平底鍋中倒入油、鍋熱後、放入挖好洞的豆腐片;

  4、将鹌鹑蛋打入豆腐中的小洞,小火慢慢煎;

  5、煎至底部凝固後、将豆腐翻面繼續煎至金黃色盛出裝盤;

  6、鍋中留少許底油、倒入蒜苗丁翻炒;

  7、倒入生抽、水、紅椒碎、鹽;

  8、倒入水澱粉,攪拌勻;

  9、待湯汁黏稠将汁澆在豆腐上即可。
