  1、帶魚洗淨去除内髒和頭尾後切成段,蔥姜切成蔥段和姜片,帶魚放進盆裡,倒米酒蔥段和姜片腌制片刻去除腥味

  2、鍋熱後倒入半鍋油,7分熱後放入帶魚段炸透,撈出備用

  3、将熱油倒出後留少許油,放八角和香葉炒香;再倒入清水、糖、醋、鹽、老抽和少量米酒煮沸

  4、将腌制帶魚的蔥姜鋪在高壓鍋最底層,帶魚鋪在蔥姜上,把煮沸的湯汁倒入高壓鍋内,蓋上鍋蓋小火炖壓30分鐘即可。
