風幹臘大腸的腌制方法

  1、清理肥腸:新鮮肥腸先接在水龍頭底下沖幹淨髒物,剝掉表面的油脂,然後翻轉過來,用大量鹽和白醋不斷揉搓沖洗幹淨。

  2、腌制肥腸:清理幹淨的肥腸用調成汁的五香粉水和适量鹽,醬油腌3天,中途翻動。

  3、熏制臘腸:腌好的肥腸在室外晾幹水氣,放入加有谷糠,果殼,橘子皮等熏料的熏箱裡密封熏制。
