巧克力其實是不适合放在冰箱裡的，因為冰箱其實是一個潮濕的環境，而巧克力中的糖份是很容易通過冰箱裡的微小的水份所溶解，等到水份流失之後還會留下糖晶，因此如果把巧克力放冰箱的話，那麼就會使巧克力的表現被糖晶所覆蓋，就會影響到巧克力本身的口感，再者巧克力中的可可油晶料也有可能使巧克力再次結晶，從而引起巧克力反箱的問題。
