請問炖牛肉都應該注意哪些細節

  “炖牛肉”應該注意的細節有:

  1、選肉:适于炖吃的牛肉部位有腱子、腰闆、弓口、胸口、外脊等;

  2、清洗:先整塊沖洗,去掉表面浮着髒物;擦淨後切成核桃塊,浸泡在清水中約半小時,去除向中的污血雜質,撈出備用,但切忌用熱水或開水緊肉,否則肉質變老,不易炖爛;

  3、調湯:調湯不能用醬油,因醬油内含有味苦的糖色,加入湯内煮後,會使肉湯也略帶苦味,炖出的肉味大為遜色;湯水量要一次加足,不可中途添水,若湯不夠,隻能加熱水或開水,千萬不能中途加涼水,否則開鍋的肉遇到涼水,易使肉表
