  1、蟹鉗用刷子刷幹淨裝盤,檸檬切片,擠入檸檬汁,加白酒一起腌制5分鐘。

  2、加入姜片,繼續腌制10~20分鐘,大蒜、朝天椒切粒備用。

  3、鍋燒熱,放入食用油,開大火,下大蒜、朝天椒炒香,接着倒入老抽翻炒幾下,倒入腌制好的蟹鉗(檸檬片取出),炒啊炒。

  4、炒至稍稍變色,加少許清水,待燒開後再倒入一瓶蓋白酒、少許十三香、鹽、蘑菇精、胡椒粉,調中火,讓它燒着,時不時用鍋鏟翻一翻。

  5、燒至汁水半幹就可以出鍋了,出鍋前先滴幾滴香油,趁熱翻炒幾下。
