  1、魚頭洗淨,從中間劈開成兩半。

  2、鍋中放油燒至7成熱,将魚頭塊入鍋煎至兩面略微焦黃。

  3、将魚頭撥到鍋的一邊,放入蔥、姜略爆,注入4碗熱水,以沒過魚頭為宜,加蓋大火煮至沸騰,改中小火煮十幾分鐘直至湯呈奶白色。

  4、将切塊的豆腐放入,中火煮5分鐘左右,調入鹽、雞精粉、胡椒粉即可。
