  1、蔥、姜洗淨後切成末;

  2、牛肉洗淨去筋,漂淨血水後片成薄片,用鹽、料酒、姜、蔥腌15 分鐘;

  3、往鍋内注入食用油,燒至五成熱時倒入牛肉片,炸至酥香撈出;

  4、鍋内留底油,放入幹辣椒、花椒翻炒出香味,然後下牛肉片炒勻;

  5、加高湯、酒、五香粉、糖,燒開後放入辣椒粉、孜然炒香;

  6、放入紅油、味精、香油,翻炒均勻,裝盤,撒上芝麻即可。
