煮生羊肝的正确方法

  1、取羊肝半籠,約300克。

  2、剔去筋膜、切薄片,放入加白醋的清水中的浸泡;

  3、沖洗肝片血汁,加豌豆澱粉、剁椒醬、胡椒粉、味精,抓合均勻。

  4、油熱下泡姜、泡海椒、豆瓣醬煎出香味;

  5、加水燒開,下黃豆芽;

  6、淖熟撈入凹盤中;

  7、小火,将肝片展開放入;

  8、劃散,肝片剛變硬、放雞精連湯倒入凹盤中;

  9、菜籽油燒熱,放花椒炸香、淋入肝片上,灑白芝麻、蔥顆、小米辣顆即可。
