素炒茄子怎麼做好吃

  1、首先将茄子去皮,洗淨,切成長6厘米、0.3厘米見方的細絲,放入碗内,加清水浸泡五分鐘左右,撈出,瀝淨水。

  2、鍋架火上,放油燒至七成熱,下花椒炸焦出香味後(撈出花椒不要),再下蔥末稍炸變黃,然後放入茄絲同炒三分鐘左右,炒至茄絲變軟,加精鹽、醬油和素湯,汁燒開後加蓋,用小火焖燒三分鐘,汁快幹時,放味精,颠翻均勻即成。
