  1、嫩豆腐,熟竹筍,水面筋,水發香菇分别切成小丁。荠菜去雜,洗淨,切成細末。

  2、胡蘿蔔洗淨,入沸水鍋中焯熟,撈出晾涼,切小丁。炒鍋上火,加油燒至七成熱,加入素鮮湯,豆腐丁,香菇丁,胡蘿蔔,筍丁,面筋,荠菜末,精鹽,生姜末,燒沸後加入味精,用濕澱粉勾稀芡,淋上麻油,出鍋裝入湯碗即成。
