  1、材料:長茄子2個、五花肉100克、辣椒1隻、蒜5瓣、油适量、醬油2勺、糖1勺、酒兩勺、油(15湯匙)、鹽(1/3湯匙)、雞粉(1湯匙)、生粉(1湯匙)、八角(大料)兩枚、蔥三棵,切碎、蒜三瓣,切片、香菜兩棵,切碎、豆瓣一匙、澱粉一大匙加水兌成芡汁。

  2、做法:将茄子豎切成4條,再橫切成段,五花肉切成絲。将辣椒切片、蒜拍碎。把油加熱,将茄子放入鍋中炸一下即刻撈起。

  3、鍋内放入兩勺油,先爆辣椒和蒜,再放入肉絲炒至變色,然後放入炸好的茄子,加醬油、糖、酒和少許調味後,出鍋裝盤。
