五香醬牛肉的配方

  1、牛腱子(1kg左右)放入冷水中浸泡2個小時,去除血水後,洗淨切成大塊,飛水,撈出備用。

  2、鍋内放入足量多的水(沒過牛肉),放入東北大醬8湯匙、老抽1湯匙、白糖2湯匙和料包,煮沸,放入牛腱子塊,大火燒開,撇去浮沫,轉小火炖煮3個小時。炖煮過程中,注意翻動,以便上色入味均勻。

  3、用筷子紮一下,能順利紮透就好了。

  4、關火,暫不撈出,醬牛肉與湯汁一并放涼。之後撈出,将醬牛肉放入冰箱内冷藏2-3小時後食用,口感味道更好。
