  1、将幹魚翅放入湯鍋内,加入清水置火上,加鍋蓋用小火燒開後離火浸泡,待魚翅脹發後,刮去表皮沙質洗淨。

  2、再放入鍋内并加清水,加蓋用小火燒開後離火,待其脹發後,刮淨黑皮用清水洗淨。再一次加蓋用小火燒開,将魚翅撈起,拆去魚骨頭和腐肉,用清水反複漂洗幾次,再用幹淨布将魚翅包好,用開水焯一下撈出待用。

  3、将魚翅、雞塊、幹貝一起放入湯碗内,加入料酒、蔥段、姜片、精鹽和适量的清水,上籠蒸軟後取出,并撇出雞油,撈出幹貝留做他用。将750克雞湯放入鍋内,并将鍋置火上把湯燒開。雞脯肉斬細,加入蔥姜水150克攪勻,倒入湯鍋内,煮開後,撈出雞脯肉,湯中加入味精。魚翅放在湯碗中,把煮好的雞湯盛入湯碗内即成。
