  1、雞大胸去筋去膜剁成肉茸;

  2、加入礦泉水和蛋清攪拌,充分混合均勻,成稀糊狀,加入濕澱粉;

  3、雞茸、礦泉水、蛋清和澱粉的比例是 500克水、500克雞茸、6個蛋清,濕澱粉2兩;

  4、加入油、鹽、胡椒碼味兒并攪拌均勻;

  5、砂鍋鍋中裝水做開,倒入雞茸糊;

  6、大火,可以看到雞茸在開水中漸漸凝固成豆花狀,不能大開,冒泡即滅火,即“養熟”;

  7、将雞茸連鍋放入蒸鍋大火蒸十分鐘,端出後撈到事先吊好的雞湯中即可。
