蒜香排骨要怎麼做

  1、首先将大蒜仔、生姜、香蔥分别切末,備用;

  2、然後脆骨小排請斬塊,在清水浸泡一會兒,濾去血水洗淨,加入調味汁、蒜末、姜末,攪拌均勻,腌制半天以上;

  3、接着坐鍋,倒入多點油,油熱後入蒜末,小火炸至微黃撈出備用;

  4、腌制入味的排骨,盡量去掉腌制用的蒜末、姜末,沾上生粉,一塊塊分次放入炸過蒜末的油裡,小火炸至外焦微黃,撈出;排骨全部炸好後,再次一起倒入熱油裡過次油,複炸一次,撈出瀝幹油;

  5、鍋裡留一點底油,小火入辣椒粉稍微翻動一下,倒入炸好的蒜末,加點鹽略翻炒,倒入炸好的排骨略翻動,攪拌均勻,撒入蔥花即可關火起鍋裝盤。
