  1、食材:龍蝦仁200g 鹽10g,味精5g,白胡椒粉5g,色拉油200g蔥、姜各10g,高湯250g ,玉蘭片50g,水發木耳40g,菜心4顆,雞蛋3隻,豬肥膘肉50g。

  2、蝦仁、肥膘肉洗淨剁細成泥狀,加蛋清,調料攪拌上勁,做成蝦膠;

  3、鍋置中火燒熱,冷油滑鍋,留底油将蝦膠擠成稍小于乒乓球的丸子,逐一煎成兩面金黃色的蝦餅待用;

  4、另起鍋,煸炒蔥姜,注入高湯,将玉蘭片、水發木耳、菜心、蝦餅倒入鍋中燒開、調味,裝入玻璃煲中即可。
