  1、将茄子去皮去把、切大丁塊、肥瘦肉切3.6厘米長、2厘米寬、0.3厘米厚的火鐮片。

  2、鍋内倒入植物油,燒熱後、把茄子炸成金黃色,撈出控淨油。

  3、炒鍋放入豬油,先炸大料瓣,下入肉片煸炒,加入面醬攪炒幾下後,再加入蔥末,蒜末,料酒,醬油,白糖,清水,将茄子下鍋,放入味精,用鹽找口,蓋嚴鍋蓋,茄塊脹起後、勾芡淋上花椒油即成。
