  幹鍋和幹煸的區别在于用油量以及火候大小:幹鍋的用油量大于幹煸,其火候也大于幹煸的火候。幹煸又稱為煸或幹炒,它是一種在較短時間内加熱成菜的方法,原料在經過刀工處理後投入小油量的鍋中,然後用中火不斷翻炒,在原料見油卻不見水汁時加調味料和輔料繼續煸炒,直至原料幹香滋潤即可,其成菜具有色黃油亮、酥軟化渣、無汁醇香的風味特征。
