  1、将筍切去老的部分,剝去筍衣,将筍切絲,筍子處理好後,加入生水或過濾水,沒過筍子,上面壓個東西,确保筍子全在水面下。

  2、放置24小時後的筍子已有酸味,把泡筍子的水倒掉,加入鹽巴。

  3、鹽巴攪拌均勻後還會再出水,把筍子壓緊,室溫放置24小時,24小時後裝罐,一定要使勁壓緊,多的水倒掉,表面保留一點水即可。
