  1、先将肉切成長約5厘米、寬約2厘米的薄片,放入碗内,加入少許鹽、雞蛋清、水澱粉,拌勻挂漿,大蒜去皮,切成蒜片備用。

  2、炒勺内放入白油,燒至五成熱時,放入挂好漿的肉片,用鐵筷子撥散,肉片已熟将油滗出,勺内留油少許,放入蒜片煸炒,待蒜片放出香味時,倒入對好的芡汁(湯,鹽,味精,料酒,水澱粉),颠翻均勻出勺即成。
