1、最好的溫度應該在2-8度,在腌制(豬肉上撒鹽)新鮮豬肉的時候,發生變質,溫度過低,則水分都凍結了,沒有腌制的效果。

2、在烘幹的過程中,我們的目的是保證肉在不變質的前提下,快速烘幹,這個溫度高則變質,溫度低則很多天都不幹,而又發生變質。
